Day 14 – cooking without oil

Box of produce

Door To Door Organics Bitty Box

As I said in my last post, today was the first delivery of the Door To Door Organics produce box. It’s a pretty handy service if you’ve got a way to receive a delivery such as this. Unfortunately my building is not package friendly if you know you wont be home, and sometimes even if you are home. Yeah the doorbell is tricky, you gotta mash on it REAL HARD for it to work. I’ve had plenty of UPS delivery slips stuck to the door when I was home, waiting for them. But I left the special instruction to press hard on the doorbell, so I got my box of goodies. They pack the box in layers with brown paper, they put a freezer pack in the box too. They give you a sheet of instructions on how to properly store your produce. And they recycle the boxes and freezer packs with each delivery. I’ll leave it up to you to decide if the above photo of produce would be worth $27 to you. I had a discount coupon so this was only $13 for me. This week I also got a discount coupon to try the Amish Healthy Foods store just down the street. Once that officially arrives I’ll go check them out.

Mighty Muffin

Mighty Muffin

Whole Foods had a check-in event yesterday that included a class on cooking without oil. They started us off with the Mighty Muffin from the Engine 2 Diet book. I can’t believe this muffin has no added oil, eggs or other dairy product of any kind in it. This was a REALLY tasty muffin! I need to pick up some oat bran and give it a try. They also made us some AMAZING roasted asparagus. I’m eager to make some of that too. Instead of oil they used orange juice. That was a really great flavor. It seems the biggest trick to cooking without oil is getting the pan hot enough first. Then use either vegetable broth, water or some other liquid depending on what you’re making.

I also got some of the recipes from the previous class I missed. I’m really looking forward to the breakfast smoothie idea for the morning. Also I’m excited to try out the Apple-Cinnamon Oat Squares recipe. This is all giving me great ideas for a pot-luck bbq this weekend. I need to be sure I bring something I can eat!

What’s your favorite vegetable? How do you like it cooked? Help me out here!

You might want to check out Vegan A Go Go. http://veganagogo.com/ It is a cooking website for Vegan’s with how to videos. The recipes seem pretty easy to follow but I have not tried them myself. Also, Karyn’s on Halsted is going to start offering cooking classes. They said the first one would be free, so maybe checkout their website to see when it will be http://www.karynraw.com
