Yesterday was another day where I left the house early in the morning and didn’t return until pretty late. Also, Friday was a kind of late night as well, so I didn’t have any night before preparation. My breakfast was water and a handful of nuts. So I was a bit hungry by lunchtime. The oppressive heat of the afternoon and the crowded Printers Row Lit Fest really helped me to become a Snarky McSnarkerson. My friends picked a taco place to stop and eat. The fact that Mexican food has options of either meat or cheese had slipped my mind until I entered the crowded restaurant. Very little room to navigate the tables to the counter, and people everywhere only exacerbated my snarkiness.
I left my friends to eat their tacos and walked over to Bar Louie knowing they’d have at least salad for me to eat. It only took half an hour to get my salad, but I had a seat at the bar and I didn’t feel like I was totally in the way. By the time I got home I was hungry again so I prepared my new favorite sandwich with hummus, avocado and tomatoes along with a giant bowl of fruit salad.
I’m finding the big challenge for me is to eat everything before it goes bad. I’ve been saving clippings and vegetables that are looking a little too wilty for salad in a bag in the freezer. I’m going to make my own vegetable broth once I’ve got enough. I’ve made the recipe from Vegan Yum Yum before so I have an idea of what I’m in for with this project. But I know you get some great stuff out of it. And homemade broth/stock will be great for continuing cooking without oil. Just freeze the broth into cubes and toss one broth cube in the pan rather than using oil.
